Spring has a softness that I love. It arrives not with fanfare, but with quiet changes — light filtering differently through the windows, herbs returning to the garden, and a renewed desire to eat light, green, and fresh.

This soup is one of my favorite ways to welcome the season.

It’s simple. It’s bright. And it’s just the kind of gentle nourishment that feels right after the heavier meals of winter.
Peas bring a natural sweetness, while mint lifts everything with a whisper of freshness. It’s quick to prepare, comforting to eat, and just fancy enough to serve for a slow weekend lunch with someone you love.

Here’s how I make it:


Pea and Mint Soup
a fresh, silky soup full of spring flavor
Serves 4

Ingredients
1 tbsp olive oil
1 medium onion, chopped
1 garlic clove, minced
500 g (about 3½ cups) fresh or frozen green peas
750 ml (about 3 cups) vegetable broth
10–15 fresh mint leaves (adjust to taste)
1 tbsp lemon juice
Salt and freshly ground black pepper, to taste
Optional: 2–3 tbsp cream or plain yogurt for extra creaminess
Optional, for serving a drizzle of olive oil, fresh mint leaves, or a spoonful of cream

Instructions

Sauté the aromatics:
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 5–7 minutes, until soft and translucent. Add the garlic and cook for another minute.

Add the peas and broth
Stir in the peas and pour in the vegetable broth. Bring to a gentle boil, then reduce heat and simmer for about 7 minutes, or until the peas are tender.

Add mint and lemon
Remove the pot from the heat. Stir in the fresh mint leaves and lemon juice. Let sit for 2–3 minutes to let the flavors blend.

Blend until smooth
Use an immersion blender (or a regular blender, in batches) to blend the soup until smooth. For an extra silky texture, strain through a fine sieve.

Season and serve
Season with salt and pepper to taste. For added creaminess, stir in a spoonful of cream or yogurt. Serve warm or slightly chilled, garnished with fresh mint or a drizzle of cream or olive oil if desired.


This soup reminds me to slow down, to listen to the seasons, and to care for myself in small, quiet ways.
