Creamy Asparagus and Spinach Soup with Lime


Ingredients:

1 tbsp olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 bunch of asparagus, trimmed and chopped
2 handfuls of baby spinach
3 cups vegetable broth
½ cup full-fat coconut milk
Juice of ½ lime (plus more to taste)
Salt and pepper to taste

Instructions:

Heat olive oil in a pot over medium heat. Add chopped onion and sauté for 3–4 minutes until soft.

Stir in garlic and chopped asparagus. Cook for 5 minutes, stirring occasionally.

Pour in vegetable broth and bring to a gentle boil. Reduce heat and simmer for 10 minutes, until asparagus is tender.

Add baby spinach and cook for 2 minutes until wilted.

Use an immersion blender (or regular blender in batches) to puree the soup until silky.
