Spring’s quiet return always brings a shift in what I crave. After the grounding foods of winter, I long for lightness — not only in meals but in how they make me feel. Fresh air, gentle greens, and flavors that feel like a soft exhale.
This broth is just that.
It’s not a soup exactly, but a warm herbal infusion — delicate, easy, and deeply soothing. Perfect for the in-between days of early spring, when the body still remembers winter but the garden is waking up.
It takes very little effort and even less time, yet the result is something I come back to again and again when I need a reset.
Here’s how I make it:
Spring Broth with Fresh Herbs
a light, calming infusion for seasonal wellness
Serves 2–3 as a warm sip or starter
Ingredients
1 tbsp olive oil
1 small shallot, finely chopped
1 garlic clove, thinly sliced
1 liter (about 4 cups) vegetable broth or filtered water
1 small bunch fresh parsley
4–5 sprigs fresh thyme
1 small handful fresh mint leaves
2 thin slices of organic lemon (with peel)
Salt and freshly ground black pepper, to taste
Optional: a few fresh nettle leaves or lemon balm
Optional, for serving: fresh herbs, edible flowers, or a drizzle of olive oil
Instructions
Gently sauté the base
In a medium pot, heat the olive oil over low-medium heat. Add the shallot and cook for 3–4 minutes until softened. Stir in the garlic and cook for another minute, just until fragrant.
Simmer with herbs
Pour in the broth or water. Add parsley, thyme, mint, and lemon slices. If using nettle or lemon balm, add those too. Bring to a gentle simmer — not a boil — and let it steep uncovered for 10–15 minutes.
Strain and season
Remove from heat and strain the broth through a fine sieve. Taste and season lightly with salt and pepper. Keep warm or reheat gently if needed.
Serve simply
Pour into cups or shallow bowls. Garnish with a few fresh herbs, petals, lemon slice or a swirl of olive oil if you like. Sip slowly, breathe deeply.
